和ベーグル / Japanese bagel

ワッフル食べ比べとシソジュース,自家製豆乳ヨーグルト2種 / Comparing the taste of waffle ・red-perilla juice,and 2 kind of home-made soy yoguret


It’s became hot since the day before yesterday, are you fine?

Last night I got fresh vegetables from home, there was a lot of red-perilla. Then I made Perilla juice. I like the color very much. It’s easy to make.  1)Put teared red-perilla into boiling water. 2)Boil it 5-10min. 3)Put out the leaves and squeeze. 4)Add sugar. 5) Add sodium citrate. (Their rate was below: the leaves : suger: sodium citrate=1:3:1/10)
That’s all! It is good for your health especially in this season.

As for my experiment about cake using rice powder, I made waffle yesterday morning.
One was made from strong flour and weak frour. Compared to this, the other was made from rice powder. Other ingredients were same. As a result, latter was so crispy (ぱりっと、in Japanese) and inside was so sticky (もっちりと、in Japanese) , I thought that they were at their best when they were hot from pan.

Left side was from flour, right side was from rice powder.
The skillet was not for waffle, but the recipe of dough was for waffle.

And I was very happy to go well making yoguret of soymilk. I tried 2 way. Both of them came out well. How to make those...next time.

米粉スコーンvol2と米粉のスパイシーケーキ / rice scone vol.2 & rice spicy cake


This morining, I tried to bake rice scone again. One is the same recipe that of yesterday to compare.
Tere was 2 differences between last time and this time. Last time I mixed ingredients the night before, today immidiately baked after making scone dough. 2nd, today used honey insted of agave sirup. As a result(may be) , the texture and taste weren't same at all. Both of them were sticky, but not same. Last one was similar to Japanese mochi, so I think that it might go with syoyu. Today’s was similar to bagel, and outside was very crispy, had less rice flavor.
Moreover I bake other kind of scone, I putted soy-yougret and a little sake lees instead of soy milk. I and husband thought that this one was better than plain one.
Additionally I tried to make rice cake which contained raisin, apricot, yuzu  peel, and some kind of spice. This was a little bitter so maybe go well with jam or cream.
From left, spicy cake, soy-yougret scone, and plain scone. Maybe because of using cup not cake pan, spicy cake was look like scones...

米粉の焼き菓子試作はじめました / I'm studying the recipe and how to make delicious cake, muffin, bagel, and bread from rice powder which  

I decided to study making delicious sweets and bread with rice powder yesterday. Then at once
I tryed making something this morning.

(maccha powder,instead of pumpkin powder)
Camembert cheese&tomato, GYOZA dog, CALPIS bread, and sausage bread

The rice scone was different from which is made from flour. It was a little sticky, more and more I chew it, the taste of rice, soft sweet , appeared more, and became better.
Rice bable, the texture was nice, but the taste・・・need more study. (maybe maccha taste was too strong)
Breads, almost all of them were sticky a little. Maybe I needed to knead well.
I'll make effort to make a bread without flour, with only rice powder. But it is difficult to deal with rice powder well and to bake bread itself. So at first, I think I should practice make basic bread from flour.

異物が優勢してしまったようです/ It seemed that the winner was something strange


Yesterday I got home in a happy mood because I was sure that the yeast was well cultivated seeing how they went in the morning. But I opened the bottle and smelled it when I came home, knew that I might have cultivated something strange. Discarding it was only thing what I could. Unfortunately, there was one more thing which depressed me. I prepared to make ‘soyasi-water’, which is needed to make original soy yogurt. I put rice and water into a bottle, left it in a refrigerator for 3 days ( to kill unwanted bacteria)  after that kept it in a room temperature for 3 days(to ferment). If I successed, I ought to see a film on the surface of the water, but not. I failed.

Am I unsuited for fermentation…?

I’m going to bake scones and bagels to take my mind off.

レーズン酵母もご飯がお好き?!/ Yeast fungi adhereing to raisin also likes rice?!

Last months 23rd I put raisins and water into a sterulized bottle in order for the fermentation occur.
It is said that usually the fermentation, by raisin yeast, occur in 3 days. But there were any change in the bottle 26th. Why? My husband said 'is it because water activity? Some kind of yeast can't live in the water with high suger content.'. Oh, I had no idea about that! So I added some water. After 2 days, no change. Thinking that it may because of temperature,I made the bottle leave in warm condition. No change. Yesterday, I knew ''Rakken-temple kobo''. Rakken-temple kobo is complex type, an apple, a carrot, a yam and rice are used to fermentation occur. And I glittered. 'How about adding rice as their nutrients'. Then this morning I did it. When I came home, I found that a lot of air bubble in the bottle, which meant yeast breathe well. Finally they were activated! Now I can hear a unique sound produced by the yeast.
By the way, last weekend I went home to Ibaraki. And I prepared some kind of bread for my mother who loves bread and had them with my dear sisters and niece. They were happy, which made me also happy.

Monkey bread- Chocolate, strawberry jam, ogura ann or butter inside each small portion



Tofu muffin- Very easy to make. Mix Tofu, honey, olive oile, flour and baking pouder with a folk in order and just bake in a oven. I decorated with chocolate for my niece who loves chocolate very much.



 
 Other things I made these days...
  


Red Japanese basil syrup. I noticed I didn't have enough sugar after started preparing, so added ume syrup used black syrup as sugar.

Eggs-benedict( Because I bought a lot of bread, instead of English muffin, I toasted bread left behind)

ダーリン、事件です / It's happening!

最近、たまにアリが部屋に入ってくる。でも、行列は見かけないね、とダーリンと話したところなのですが
あったよー。今朝見つけました。ベランダで。
どこから来ているんだろう。
よく見ると、卵のようなものを運んでいます。

ここはどこでしょう。
なんと!!見てダーリン!ベランダ菜園のミニトマトの鉢からお庭まで一面アリだらけ!あの卵のようなものは一体何だったのでしょう。

帰宅後、ありんこはどうなったか見ていませんが、酵母たちの元気がないようだったので、酒粕のほうにお砂糖を6gほど投入してあげました。

Regarding yeasts, I put 6g of sugar into sake-lees's bottle because the yeast looked depressed.
